The Wisconsin Idea signifies a general principle: that education should influence people’s lives beyond the boundaries of the classroom. This “Idea” has become the guiding philosophy of UW’s efforts in teaching, research, outreach and public service in Wisconsin and throughout the world.

The new Meat Science facility is rooted in the Wisconsin Idea. The Meat Science faculty are looking forward to continued collaboration with the meat industry to solve real-world problems while educating students and professionals to become industry leaders.

At UW-Madison, we take a cross-campus, multidisciplinary approach while partnering with industry. This approach is supported by faculty and staff in food safety, engineering, veterinary medicine, animal agriculture and biology.

The mission of the Meat Science and Animal Biologics Discovery program is to interact across campus to develop experienced, critical-thinking meat industry leaders, discover new uses for animal components in enhancing animal and human health, and provide objective expertise for educating students, scientists and society in wholesome foods derived from animals.

We will fulfill our mission by:

• Training the next generation of meat industry leaders with cutting edge insight and technologies;
• Supporting innovative research interests through interdisciplinary collaborative efforts;
• Providing outreach education to foster the production of wholesome meat products for the consuming public and;
• Promoting economic development of the meat industry. We’ll continue to help today’s meat crafters hone their skills at the Wisconsin Master Meat Crafter Training Program, created to help forward-thinking professionals in today’s meat industry get advanced training they can use to grow their businesses and create new artisan products.
