PhD Candidate Jessica Brown’s Recent Paper Featured In AMSA eNews

A scientific paper (Utilizing a Combined Approach to Assess the Antimicrobial Efficacy of Peracetic Acid on Chicken Thighs and Beef Trim) with Jessica Brown (MSABD PhD candidate) as lead author was recently published in Meat and Muscle Biology, the official journal of the American Meat Science Association (AMSA). The paper was then featured in a recent AMSA eNews newsletter that went out on February 15. A study designed to “evaluate the impact of peracetic acid (PAA), when used as a short-duration antimicrobial spray, on the pathogen load and microbiota of inoculated chicken thighs and beef trim” is discussed in the paper.
